The Skirt steak comes from the diaphragm muscle of the steer, located inside the chest cavity (inside skirt) or outside the chest wall (outside skirt). With our F1 American Wagyu, its naturally strong, rich beef flavor is complemented by a higher degree of intramuscular fat and a succulent texture. This coarse-grained cut absorbs marinades beautifully and is best cooked quickly over high heat to medium-rare or medium. It is crucial to slice it thinly against the grain for maximum tenderness and enjoyment.
