Short Ribs are cut from the beef plate, short plate, or chuck primal, consisting of a portion of the rib bone surrounded by layers of flavorful meat and connective tissue. With our F1 American Wagyu, the already rich composition of this cut is significantly enhanced by a higher degree of intramuscular fat. When cooked slowly with moist heat, this fat and collagen break down, resulting in exceptionally tender and succulent meat that is packed with profound, savory flavor, making them ideal for long braises and gourmet stews.
